Nemo Fish

Any time Cade catches me on the computer he asks to see Lightning McQueen.  This led us to the Disney website, where I found a cute little recipe for these guys....

Each fish is 2 dried apricots.  Cut 1 apricot into 3 pieces- one end for the head, the middle for the body, and a small sliver off the other end.  You don't need the sliver- the directions said to save it for trail mix or something, but I used it to keep my little monkies occupied while I did the cutting. :)  Cut the other apricot in half to form the rear and tail.  Melt white chocolate according to directions on the package and dip apricots in.  Use a toothpick to make a hole for the eyes and fill with mini chocolate chips.  Place fish on waxed paper and refrigerate until the chocolate hardens.  Enjoy!
